Chunklit
Grabcrackers (an
exceptional and large cookie!) This
is a favorite cookie recipe of Linda's! Kids, make sure you cook with an adult.
It's safer, and fun!
2
cups packed brown sugar 2
sticks butter, softened 2
eggs 1
teaspoon vanilla 3/4
teaspoon baking soda 3/4
teaspoon baking powder 1/4
teaspoon salt 2
cups flour 1
1/4 cups uncooked oatmeal 3
cups Special K cereal 1
1/2 cups flaked or shredded coconut 12
ounce pkg. chocolate chips | |
In a large
mixing bowl, combine the brown sugar and butter. Cream until well blended.
Stir in the eggs and mix well. Mix in 1 teaspoon vanilla. Combine the baking soda,
baking powder, salt and flour. Fold into the sugar-butter mixture. Add the oats
and blend well. Add the coconut and blend well. Then add the chocolate chips and
blend, and finally blend in the Special K cereal. Scoop
out big balls of batter--about ice cream scoop size to make large cookies. Flatten
each scoop slighly with palm of hand or a glass. I can fit 8 cookies on my large
cookie sheets. Bake
in a 350 degree oven for 13-15 minutes. Remove from oven and let cool slightly
before removing them to cooling rack. Makes 3 dozen large cookies. Click
